Traditional Japanese styles

Cold soba noodles on a plate or in a bowl or on a bamboo tray with a dipping sauce.

Ingredients

  • - TakitaSoba dried noodles(100g/person)
  • - TakitaSobaNoodle soup base
  • - Leek
  • - Japanese horseradish

Directions

  1. Boil water in caldon. Once boil, put driednoodlesint the caldon and boil for 3 – 4 minutes. Be careful not to boil over.
  2. Chop the leeks. Ready Japanese horseradish. You can enjoy any spices what you like.
  3. Strain the soba noodles well using a strainer.
  4. Linse and cool them under running water. Then strain them again  
  5. Plate Soba with soup base, leek and Japanese horseradish.
  • If you sprinkle salt over the Soba, it would be fit for the snack with alcohol.

Soba noodles in a hot soup with crunchy pieces of fried tempura batter

Ingredients

  • - TakitaSoba dried noodles(100g/person)
  • - TakitaSobaNoodle soup base
  • - Leek
  • - Dried seaweed(1g/person)
  • - Tempura scraps(2g/person)
  • - Boiled fish-paste(2slices / person)

Directions

  1. Soak dried seaweed in water.
  2. Slice leek thinly.
  3. Boil water in caldon. Once boil, put driednoodlesint the caldon and boil for 3 – 4 minutes. Be careful not to boil over.
  4. Make hot soba soup. Boil water in an another pot and put TakitaSobaNoodle soup base in a pot according to your favorite.  
  5. Put hot soba soup in the big bowl. Put boiled soba and arrange with leek, tempra scrap and boiled fish paste.

Soba pho

Ingredients

  • - TakitaSoba dried noodles(100g/person)
  • - For pho soup
    • - Water (2 L)
    • - Chicken breast meat or chicken leg (rib preferred) (1/2 chicken)
    • - Chiken soup stock (2 table spoon)
    • - Ginger (2 cm)
    • - Garlic (2 pieces)
    • - Leek, green part ( For 2 leeks)
    • - Sugar (1 teaspoon)
  • - Onion
  • - Other vegetable what you like
  • - Nam pia (1 table spoon)
  • - Salt
  • - Pepper

Directions

  1. Make pho soup
    Hit ginger and garlic by the back of a kitchen knife.
    Put ginger, garlic and other pho soup ingredients in the pot and boil about 1 hour. Take out chicken from the pot and put on the plate.
    Add Nam pia, salt and pepper in the pot.
  2. Boil water in caldon. Once boil, put driednoodlesint the caldon and boil for 3 – 4 minutes. Be careful not to boil over.
  3. Slice onion and cut other vegetables. Wash those and drain. Cut chicken which is taken from the soup.
  4. Put soba in the big bowl. Pour hot pho soup and arrange with chicken and vegetables.
  • If you add Nam pia and / or chili sauce, it would be better.

Soba fresh spring roll

Ingredients

  • - TakitaSoba dried noodles(100g/person)
  • - Rice paper
  • - Vegetables (Japanese white radish, Carrot, Cucumber, Cabbage, cilantro, Etc)
  • - Chili sauce and/ or dressing

Directions

  1. Boil water in caldon. Once boil, put driednoodlesint the caldon and boil for 3 – 4 minutes. Be careful not to boil over. Strain the soba noodles well using a strainer. Cover with a wrap so that soba will not be dried up.
  2. Shredded Japanese white radish and Cucumber.
  3. Wet rice paper with water and spread on the wring out cloth. Put on soba noodled and vegetables on the rice paper and then wrap.
  4. Cut wrap what you like and out on plate. Add sweet chili sauce and/ or dressing.
